Menu for Thursday July 3rd

Here is what you'll get in your seasonal delivery :



Entrée #1: Stuffed portos! soft, marinated Portobello caps generously stuffed with gourmet guacamole, diced heirloom tomatoes and cilantro. served over spanish wild rice with cashew sour creme' garnish. 
Entrée #2: 7 layer Summer lasagna: Zucchini noodles, mushrooms, spinach, shredded squash and heirloom tomato sauce, basil and cashew-ricotta cheese.
Soup: chilled pineapple-blood orange soup
Summer Salad: Jicama (no potato salad) cubed jicama, sweet corn, bell pepper, minced celery, fresh dill tossed in a rich cashew-lemon dressing. a refreshing treat!
Grain:  cool quinoa  tabbouleh: steamed quinoa, parsley, diced tomato and cucumber.
